Pepperoni Pizza Monkey Bread

Ingredients:

2 Cloves garlic, thinly sliced

4 Tablespoons butter

2 lbs pizza dough

6 oz Mozzarella cheese, cut into small cubes

Package of pepperoni slices (we use minis)

2-3 cups marinara sauce , warmed, for dipping

Directions:

Heat garlic and butter over medium heat just until the garlic begins to brown. Remove from heat and let sit.

Lightly brush the inside of a Bundt pan with garlic butter

Pull off large marble-sized balls of dough and flatten. Top with slice of pepperoni and a cube of Mozzarella

Wrap the dough around the pepperoni and cheese, pinching well to seal.

Very lightly brush the pizza ball with garlic butter and place into the Bundt pan

Repeat until all the dough is used

Cover and let sit for 30 minutes while oven is preheating to 400

Bake for 35 minutes until the top is very brown

Remove from the oven and let sit for 10 minutes

Turn out onto platter and serve with marinara sauce

Everyone ate this up with a quickness, even Cadence!!

** Note*

Takes a little practice but by the end you get the hang of making sure each one is seals well (had a few fall apart on me in the beginning)

keep hands and fingers as dry and oil free as you can so the dough remains sticky for sealing. I brushed the pizza balls with oil in the pan instead of while I was holding them.

And have fun, we made pepperoni, sausage/pepperoni, sausage/mushroom.

Chicken Corn Chowder

Ingredients:

2 chicken breasts, chopped into small pieces

1 onion, chopped

1cup celery, chopped

2lbs potatoes, peeled and chopped

3 cups chicken broth

2 cups corn kernels (can use can, frozen or fresh)

2 cups milk

black pepper

1 teaspoon dried thyme

2 Tablespoons flour

Directions:

Sauté the onions and celery in a small amount of oil until translucent

Add the chicken and brown slightly

Add the broth, potatoes and corn and let cook until potatoes are tender, about 15 minutes

Remove 1/2 cup broth and whisk in the flour to make a thicker liquid

Add this back into the soup, along with the milk and thyme.011

Stir and cook for another 5 minutes on low heat

The chowder will thicken up as it sits. Remove from the heat and pepper to taste.
