Ingredients:
1 lb hardwood smoked bacon
12 oz. ground beef (80/20)
8 oz. ground pork
2 teaspoons salt
2 teaspoons smoked paprika
2 teaspoons dry oregano
1/2 teaspoon ground fennel
1/2 teaspoon fresh cracked black pepper
1/2 teaspoon crushed red pepper
1 egg
Directions
Cut the bacon into 1 inch pieces
Place into food processor
Pulse the bacon until it is evenly ground and no large chunks remain
In large bowl combine remaining ingredients
Mix gently until evenly combined.
Scoop meatballs into 1/2 inch balls making sure not to compress the balls while shaping.
Place on a parchment lined pan and chill for at least 2 hours
Heat the oven to 400F
Once the balls are chilled heat a non-stick skillet over medium heat working in batches, add the balls and brown thoroughly on all sides
Transfer to a baking sheet until the rest of the meatballs are browned
Bake until internal temp reaches 160F (about 10-15min)
Add your favorite sauce
Serve with favorite pasta
Make some delicious garlic knots for the side
