Cauliflower Cakes
Ingredients:
1 small head cauliflower
2 eggs
1/4 cup flour
1/4 cup chopped parsley
1/2 cup shredded parmesan cheese
salt to taste
olive oil
Directions:
Remove the leaves and any green stems from head of cauliflower
Place into a large pot of boiling water and boil until it is soft… you should be able to stick a spoon it and it sinks in.
Drain and dry cauliflower
then use a fork to smoosh it
In a large bowl, combine eggs, flour, cheese and parsley
Add smooshed cauliflower and mix it all up
Heat a bit of oil in a large skillet
Add a few heaping spoonful's of mixture
Allow to cook over medium heat until edges begin to brown and then flip the cakes over.
They are done when both sides are brown.
Place on a towel
Lightly salt and then serve.
