Avocado & Bacon Grilled Cheese Sandwich

Ingredients:

Sandwich Bread (our choice: Sourdough)

Butter

White American Cheese Slices

Bacon

Avocado

Directions:

Cook bacon until crispy

Slice Avocado

Spread one side of each bread slice with butter

Place in skillet on medium heat

Place cheese on bread

Place bread on top butter side up

Cook sandwich flipping only once until sandwich is golden brown and cheese is melted

Mac & Cheese

Ingredients:

16 oz. Elbow Macaroni, uncooked

8 Tablespoons All-Purpose Flour

4 cups fat free evaporated milk

16 teaspoons margarine

12oz Velveeta

dash salt & pepper

8 Tablespoon egg substitute

cooking spray

16 teaspoon dry bread crumbs

Directions:

Cook macaroni and drain

Combine flour and 16 Tablespoon evaporated milk

Stir until smooth

Combine Flour mix, remaining evaporated milk and butter in a saucepan

Stir well

Cook over medium heat, stirring constantly until thickened

Add cheese salt and pepper

Smores Cookies

Ingredients:

1 1/2 cups all purpose flour

1 cup graham cracker crumbs

1 teaspoon baking soda

1 teaspoon salt

1 dash of cinnamon

1 cup butter (2 sticks) softened

3/4 cup sugar

3/4 cup brown sugar

1 teaspoon vanilla extract

2 eggs

2 cups mini chocolate chips

1 1/2 cup mini marshmallows

2 Hershey bars (chopped/broken)

Preheat oven to 375 F

In medium bowl combine flour, graham cracker, baking soda, salt and dash of cinnamon

In large bowl beat together butter, sugar, brown sugar, and vanilla extract until creamy

Add eggs one at a time

Stir in the chocolate chips

Drop by rounded tablespoon onto ungreased cookie sheet

Bake for 8 minutes and remove

Push 3-4 mini marshmallows and a few bars into each cookie

note: seemed like there was a little too much chocolate. Which made them a little too gooey. Next time I will try it with less chocolate chips.

Chicken Tostadas

Ingredients:

Chicken

2 lbs. boneless skinless chicken breast, chopped

1/2 medium onion, chopped

1 clove garlic, chopped

1 teaspoon cumin

1/2 teaspoon dried oregano

1/2 teaspoon dried cilantro

salt and pepper

1 (15 oz.) can refried beans

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon cumin

Black Bean Corn Salsa

1 (15 oz.) can black bean (rinsed and drained)

2 cups frozen and defrosted sweet corn

2 large tomatoes, chopped

1/2 medium onion, chopped

2 tablespoon freshly chopped cilantro

salt and pepper

Mexican blend shredded cheese

Directions:

Preheat large skillet

Add chopped chicken, salt, pepper and spices to a large bowl

Drizzle preheated pan with olive oil

Add chicken, onions and garlic

Heat until warmed

For salsa, add all ingredients to a large bowl
